Sunday Mornings. Something about them that are just so perfect, especially today. I woke up with my loves next to me, the sun brightly shining through the windows and the smell of crisp, clean, cool fall air just made it a perfect morning for some spiced sweet potato pancakes.
These are delicious by themselves but if I wasn’t on prep, I will top these with some homemade cinnamon almond butter and maybe a touch of pure maple syrup!
Fair warning, these will fill your kitchen with amazing fall aroma! Perfect way to start your Football Sunday!
3 oz of cooked sweet potatoes cubes
1/8 cup of rolled oats
4 egg whites or 3/4 cup of liquid egg whites
1/2 tsp of vanilla
4 drops of stevia extract or 2 packets of stevia
2 tbsp of homemade pumpkin pie spice (see recipe below)
1/4 tsp of baking soda (optional, this will make your pancakes fluffy)
1/2 scoop of Fiber Dx (optional)
Preheat your non stick pan over medium heat and spray lightly with coconut oil spray.
Combine all ingredients in the blender and blend until everything mixed well and there are visible chunks of ingredients. Fill a 1/3 measuring cup with the batter and slowly pour into your hot pan. Make sure not to over crowd the pan. You want to have some room to be able to flip them cleanly. Be patient. Each side should take about 2-3 minutes each side.
These can be made with pumpkins as well if you prefer.
I prefer to make my own spice mixes as much as possible. This way I know exactly what goes into my food. It’s so easy and cheap!
Homemade Pumpkin Pie Spice Mix:
Combine 3 tablespoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground nutmeg
1 ½ teaspoons ground allspice
1 ½ teaspoons ground cloves
Combine all ingredients and store in an airtight container.
